Welcome to Quimbaya by Edwin Rodríguez is the only Colombian signature cuisine restaurant in Madrid to have been awarded 1 Star by the Michelin Guide Spain.

Located at Calle Zurbano 63, one of the most exclusive gastronomic areas in Madrid, we present a proposal inspired by the flavors of Colombia , enriched with culinary traditions and techniques from there and here, under the contemporary, creative and very personal interpretation of our owner chef Edwin Rodríguez.

We present our concept through Tasting Menus, our specialty. Through them, we travel through the Caribbean, the Pacific, the Andes, the Orinoquía and the Amazon; different gastronomic areas of Colombia that are linked together by the stories that our chef draws inspiration from to create the dishes.

We are a different kind of restaurant. In an exclusive space with only 8 tables and views of the kitchen, we offer a signature gastronomic experience and, although we are inspired by Colombia, we do not make traditional Colombian cuisine; we showcase the cuisine of chef Edwin Rodríguez, for which we recommend allowing enough time to fully enjoy it.
